Is there a way to date GEM razors? Similar to the date codes that Gillette has on it's razors.

Nope.. you just have to go by style for the model years.

I'm looking forward this too! It will be a valuable reference. I visited the ASR site and they did have much of anything in terms of historic razor info. Just a rather generalized time-line of company achievements.
